Chicken stew with chickpeas and rice

My slow cooked chicken and chickpea stew is a recipe my family has been cooking for years. After lightly browning strips of chicken breast in extra virgin oil, I add a handful of pungent basil, sweet balsamic vinegar, chicken stock and chopped garlic before leaving the dish to cook slowly on the hob. The casserole is served alongside fluffy basmati rice.
